United by a shared passion for exceptional food and hospitality, we’ve joined forces to expand our reach while staying true to the values that define us—farm-to-table excellence, scratch-made quality, and a deep commitment to our local community.

  • Chef Coridon Bratton (Cory)

    As the owner of A Vermont Table, Chef Coridon Bratton has built a reputation for crafting seasonal menus inspired by Vermont’s local farms and producers. Under his leadership, A Vermont Table was named Best Catering Company in Brattleboro, Vermont in both 2020 and 2022. Coridon’s global culinary journey includes consulting in France, Italy, India, Greece, and Nicaragua and working at Tom Colicchio’s flagship Manhattan restaurant, Craft.

    His commitment to community, demonstrated by his role in the Everyone Eats program, aligns perfectly with the values of this new venture.

  • Chef Tyler Haydon

    Chef Tyler Haydon brings nearly 20 years of experience in top restaurants, including The Chicago Diner, Girl and the Goat, Little Goat, and BLVD. In 2020, he relocated to Vermont, bringing his passion for comfort food and love of kitchen camaraderie to Trail87. Tyler's goal is to create memorable dining experiences that reflect the creativity and collaboration of his talented team.

  • Chef Jason Corrigan

    With over 30 years in the culinary industry, Chef Jason Corrigan began his career at the prestigious French Culinary Institute. He has held leadership positions at esteemed establishments such as The Old Tavern at Grafton, Brasserie L'Oustau, and Stratton Resort’s Verde. Jason’s expertise in menu development and dedication to using seasonal, locally sourced ingredients make him an integral part of the Trail to Table Hospitality Group.

  • Jamie Pessoa Monteiro

    Jamie, a proud Vermonter, has a deep love for her roots and a passion for travel, culture, and mixology. Her journey began in 2001 during the Craft Cocktail Revival while studying fine art at Pratt Institute in Brooklyn, NY.

    In 2016, she returned to Vermont, where she took over her childhood home and fully immersed herself in bartending. She has since managed and developed multiple bar programs, restaurants, and beverage catering services, earning top finishes in Vermont’s Bartender of the Year and Barr Hill Gin’s Royal Jelly competitions. Her original cocktails have also been published.

    As a visual artist, Jamie sees cocktails as storytelling, weaving heritage and experience into every drink. Let us help elevate your next celebration.

  • Chef Jess Demayo

    Jess is a talented baker and chef, who she brings creativity and passion to every dish she prepares. With a deep love for baking and a keen eye for detail, she is responsible for crafting the restaurant’s innovative and delicious desserts, ensuring each one is both visually stunning and full of flavor.

    Her culinary journey has been shaped by years of experience in the kitchen, honing her skills in pastry and dessert creation. At Trail87, Jess takes pride in developing unique, seasonal treats that complement the restaurant’s ever-evolving menu. Whether it’s a decadent chocolate creation, a delicate pastry, or a reimagined classic, her desserts are designed to delight and surprise.

    Beyond baking, Jess plays a key role as sous-chef, supporting the kitchen team and helping to execute the bold, flavorful dishes that define Trail87’s menu. Her dedication to quality and artistry makes her an essential part of the team, bringing warmth and creativity to every plate.
